Now, that looked like a tricky one since, according to the FAQ on the Eclipse wiki, not only you can’t but also you should not remove plug-ins from Eclipse. They present a solution to disable a plug-in, however the indicated path doesn’t exist anymore in the current version of Eclipse (3.6.2).
I decided to give up and reinstall the whole thing to get rid of the plug-ins I really didn’t want to keep, but before that I thought I’d mess a bit around the GUI. And guess what, I found the uninstallation button. It’s bloody well hidden, in Help → About Eclipse SDK → Installation Details. The first tab of this dialog box, “Installed Software”, features an uninstallation button at the bottom: just select the package you want to remove and hit uninstall.
